  • 1 tablespoon worcestershire sauce
  • 2 medium carrots, shredded
  • 2 medium zucchinis, shredded
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 dashes hot sauce, optional
  • 8 buns of choice, toasted

Preparation

  1. Make the slaw: In a medium bowl, combine the coleslaw mix, apple cider vinegar, olive oil, mustard, salt, and pepper. Toss well, then cover and refrigerate until ready to use.
  2. Make the sloppy joes: Heat the oil in a large, high-walled pan over medium heat. When the oil is shimmering, add the onion and sauté for 2–3 minutes, or until translucent. Add the garlic, chili powder, paprika, thyme, tomato paste, and dates. Stir to combine and cook for 2–3 minutes, until the tomato paste begins to brown.
  3. Add the turkey and sauté until cooked through, 3–5 minutes, stirring throughout. Add the tomato sauce, apple cider vinegar, and Worcestershire sauce. Stir to combine.
  4. Add the shredded carrots and zucchini and cook down into the sauce, 3–5 minutes. Season with salt, pepper, and hot sauce, if using.
  5. Scoop the sloppy joe mixture onto toasted buns and top with the slaw.

  4. Sprinkle the lemon zest on the interior of the chicken. Top with piece of provolone and three stalks of asparagus, then fold the chicken over enclosing the filling.

  6. Heat a large oven-safe skillet over medium-high heat, and add the oil. Add the chicken to the pan, and cook for 3 to 5 minutes, until golden brown.
  7. Flip the chicken over and cook for an additional 3 to 5 minutes.
  8. Cover the skillet with aluminum foil and place in the oven for 15 minutes, or until the internal temperature reaches 155˚F (70˚C).
  9. Remove the skillet and let sit, covered, for 5 minutes.
  10. Remove the foil, and serve.
